Walnut pie

Ingredients

1st mixture

• 400g eggs

• 240g granulated sugar

2nd mixture

• 400g walnuts, chopped

• 80g breadcrumbs

• 50g strong flour

• 2g cinnamon, grated

• 2g cardamom powder

• 2g baking powder

• Zest of 1 lemon

To make the syrup, boil all ingredients together.

• 520g granulated sugar

• 20g glucose or a little lemon juice

• 1 pc. lemon peel

• 1 pc. cinnamon stick

• 1 tbsp rose water

• 350g water

 

Method

Beat the 1st mixture in the mixer’s bowl until fluffy.

Remove the 1st mixture and put the 2nd mixture in the mixer’s bowl, and stir with a wooden spatula.

Butter and flour the baking pan and place the mixture into the pan, up to 2/3 of its height.

Bake at 170-175°C for about 35-40΄.

Once the walnut pie is ready, leave to rest for 4΄, and then pour warm syrup over it.
