Kid goat meat in olive oil and oregano with lemony wild greens

Ingredients

• 1,5 kg kid goat leg, cut into pieces

• 800g wild greens

• 2 cloves of garlic

• 1 sprig of fresh lemon thyme

• 1 tbsp oregano

• 200g olive oil

• 100g white wine

• Juice of 2 lemons

• Salt

• Pepper

Method

Pour the olive oil into a pot and sauté the goat meat well on both sides. Then add the garlic and the sprig of lemon thyme and deglaze with white wine.

Let the wine evaporate, and then pour 2 glasses of water, and let it simmer for 1 to 1,5 hours until tender. In another pot lightly boil the wild greens, drain them and then put them in the pot along with the goat meat.

Leave to rest for 10′ until all liquid has evaporated, and at the end add oregano and lemon juice.
